Katie has multiple autoimmune diseases including: brittle bone disease, MALS and POTS, in addition to celiac disease. Now in a much better place health wise, Katie is following her wanderlust, purchasing a van  and setting out on a new life adventure with her gluten detection dog, Piper. She shares some of her plans and tips for those with celiac disease who want to go on similar adventures.
